Ingredients:
Salad
- 6 cups salad greens
- 1 seedless cucumber, sliced
- 1 pint grape tomatoes
- 1/2 red onion, thinly sliced
- 3/4 cup Kalamata olives, sliced
- 8oz Odyssey Feta Cheese (cubed)
- 1 pizza crust or flatbread, baked
- 5oz Odyssey Plain Greek Yogurt
- 1/4 cup Greek Vinaigrette (see below)
Greek Vinaigrette
- 2 tbsp white balsamic vinegar
- 4 tbsp extra virgin olive oil
- 1 tsp fresh lemon juice
- 1 shallot, finely chopped
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp pepper
Directions:
- In a bowl, add balsamic vinegar, lemon juice, shallot, oregano. Slowly whisk in olive oil.
- Add salt & pepper to taste.
- Combine salad and veggies, toss with 1/4 cup vinaigrette.
- Spread Odyssey Greek yogurt onto pizza crust, top with mixed salad and Odyssey Feta Cheese
