Feta Chicken Burger

Ingredients

  • 1 tsp olive oil
  • 6 ounces baby spinach
  • 2 lbs lean ground chicken
  • 5 oz. Odyssey feta cheese, crumbled
  • ¼ cup red onion, diced
  • 2 tbsp garlic, minced
  • 1 tsp Dijon mustard
  • 1 tsp hot sauce
  • ½ tsp salt
  • ½ tsp ground pepper

Directions

  1. In a small skillet over medium heat, add a tsp of olive oil. Add spinach and toss frequently until wilted, about 4-5 minutes. Remove from heat and allow to cool. Once cool, use a paper towel to squeeze excess water from spinach. Then chop the spinach.
  2. In a medium sized bowl, add ground chicken, spinach, feta cheese, red onion, garlic, Dijon mustard, hot sauce, salt and pepper. Combine mixture together thoroughly. Form into six patties about ¾ inch thick.
  3. Grill or pan fry using olive oil to coat the pan or grates. Add patties to grill or pan and cook 5-6 minutes on each side or until internal temperature reaches 165° F.
  4. Serve on buns with lettuce and tomato or in a lettuce wrap.
