Greek Salad Pizza

Ingredients:


Salad

  • 6 cups salad greens
  • 1 seedless cucumber, sliced
  • 1 pint grape tomatoes
  • 1/2 red onion, thinly sliced
  • 3/4 cup Kalamata olives, sliced
  • 8oz Odyssey Feta Cheese (cubed)
  • 1 pizza crust or flatbread, baked
  • 5oz Odyssey Plain Greek Yogurt
  • 1/4 cup Greek Vinaigrette (see below)

Greek Vinaigrette

  • 2 tbsp white balsamic vinegar
  • 4 tbsp extra virgin olive oil
  • 1 tsp fresh lemon juice
  • 1 shallot, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions:


  1. In a bowl, add balsamic vinegar, lemon juice, shallot, oregano. Slowly whisk in olive oil.
  2. Add salt & pepper to taste.
  3. Combine salad and veggies, toss with 1/4 cup vinaigrette.
  4. Spread Odyssey Greek yogurt onto pizza crust, top with mixed salad and Odyssey Feta Cheese
  5. Enjoy!
